Lemon Strawberry Sandwich Recipe

Use our Lemon Bar Soft Baked Cookies to create a special dessert for your Easter brunch!  Grab some Mascarpone cheese and strawberry jam and whip up these fruity, mouthwatering treats.


3 bags Dewey’s Bakery Lemon Bar Cookies
1 8-oz container of Mascarpone Cheese
5 tbsp Strawberry Jam or Preserves
Powdered sugar (optional)


In a small mixing bowl, stir Mascarpone cheese and strawberry preserves until thoroughly blended. Sandwich a spoonful of this filling between two lemon cookies. Sprinkle a bit of extra powdered sugar onto the top of each sandwich if desired. Enjoy! 

Makes 10-12 sandwiches.
